Do food trucks make money?

Updated By ProfitDrawer

Short answer

Many can, but the profit depends on food cost, plates sold per service and fixed daily costs. In ProfitDrawer's food truck guide, 100 plates at $14 bring in $1,400; food and packaging take $450, and $600 of fuel, commissary, permits, insurance, labor and loan costs leaves $350 for the day before tax. A slow day of 70 plates cuts that by $285. These are example numbers.

The example day from the guide (your numbers will differ):

Line Amount
Sales: 100 plates x $14 $1,400
Food and packaging: 100 x $4.50 $450
Left after food $950
Fixed and daily costs $600
Left before tax $350

That $350 has to cover days you do not work, repairs and taxes, which is why the number of service days matters as much as the menu.

What decides whether a truck makes money:

  • Food cost per plate. The guide prices plates so food and packaging stay near 32% of the price.
  • Volume per service. Thirty fewer plates takes $285 off the example day.
  • Location and events. Private events, office lunches and catering pay a known amount and are often the most predictable income.
  • Fixed costs: commissary, permits, insurance and any truck loan, which you pay on slow days too.

Track sales by location and day; after a month you will see which spots are worth the drive. As a sole proprietor, self-employment tax of 15.3% applies to net earnings of $400 or more for the 2026 tax year, on top of income tax. General information, not tax advice.
